Thai Green Curry

Perhaps you have tried indian curries, but Thailand has a unique curry which is green in colour. Best meat for this is chicken then cook with chillis(lots of it, spicy), thai eggplant, throw in some lemon leaves and some other herbs to enhance the flavour. And the curry has a little coconut milk which makes the taste even better.


To be honest, my first impressions of this curry was quite intimidating. I mean, come on, green? What? Then I hear many whispers that this is a must try dish. So when I go for my first, those whispers couldn't be more right.


This time, my wife made it. Oh my, rich, creamy, coconuty(what?), spicy and savoury, the things that I want in my curry. Rice coated with the curry, best of the best. And those thai eggplants? They absorb the curry, so when bite into it, it just flows out.


Rice is not only recommended, but a MUST if having thai green curry. Though the curry is not recommended with pork or beef as I tried it before, it just doesn't goes well enough together, like with chicken.


Maybe this should be thai chicken green curry, but the name is too long.
